Tuesday's dinner started with a batch of bbq pinquito beans (a variety of pink beans that we found at the farmer's market on Sunday). I learned via google that the name "pinquito" is spanglish for "pink" and "quito" = little in Spanish -- and the beans really are pink and little!. The bag of beans came with a recipe, so I decided to try it out. It consists of slow cooking the beans with tomato sauce, garlic, onions, cumin, chile, bacon and a few other things. We had some baby broccoli and eggs on hand, so this was the result! The eggs we get at the farmer's market are from the Eben-Haezer Poultry ranch in Ramona (a local town). They are excellent!
